Black Rice Summer salad

We all know how great brown rice is, but have you tried black rice AKA Forbidden Rice?

It’s gorgeously nutty both in taste and texture, and is super filling. In times gone by this rice was only available to the Chinese Emperor and the Royal Family and stealing a handful could have been punishable by death!

It is anthocyanin which gives this black rice its deep purple-black colour; this flavonoid is said to protect hair follicles, another great reason to pick up some black rice next time you’re out shopping.

This particular recipe is very pleasing to the eye and a delight to eat.

Serves 3-4

Ingredients

  • 1 cup black rice cooked with 2 1/2 cups of water and pinch of salt
  • 1 cup cooked sweetcorn
  • 1 cup cooked green peas
  • 1/4 cup red onion
  • 1/4 cup red pepper
  • Handful of coriander
  • Chili flakes (optional)
  • Half large avocado, large cubes
  • 1/4 cup tangy mustard vinaigrette (link to vinaigrette recipe)

Method

Add the sweetcorn, green peas, onion, peppers and vinaigrette to the black rice in a large bowl and stir well. Because the rice is nutty, it tolerates the dressing very well. A few minutes before serving add the coriander and avocado cubes.
